On the shores of Sheepshead Bay in County Donegal on Ireland's Wild Atlantic Way, Declan uses 10,000 year old turf (dirt about 2 feet below the heather that has compressed over thousands of years) to smoke salmon from a time gone by. https://vimeo.com/200833367 When I started on this journey, I only knew one thing - I had to do it! There was a picture in my mind, Of what the ultimate smoked salmon should look and taste like.
